Canning Queen




Canning has always seemed so difficult and scary to me. Although I remember having canned tomatoes and other things in our home, I don't remember ever seeing my parents can them. Maybe they wiated until the kids were in bed, or maybe those tomatoes were relics from earlier years. Anyway, the point is, I never learned how or even saw it being done. Last year an experienced friend came over and we canned applesauce and apple pie filling together. This experience made me see it was doable--but it still seemed SOOO scary to me. This year I finally gathered up the courage to venture out on canning 40 lbs of apples on my own. Yesterday and today I have been a Canning Queen. You have to love the popping the lids to that tells you that have been processed correctly. Seriously, I haven't felt this proud and accomplished since birthing Addie--funny, huh! It feels great to have tons of applesauce -- 11 pints and 6 quarts -- to add to our food storage. Jason and Addie love applesauce in their oatmeal...if there's every an emergency, breakfast will be taken care of!!!! Phew ;)

I want to learn how to can! We will have to plan a session when we get back. That's so awesome, that you canned so much!

Look at you Mrs. Domestic, sweet! It seems intimidating to me too, but it seems intriguing too, maybe next Fall. There's no time now for such things as that when there are so many yummy treats to bake, I've got an extra 10 lbs. to gain, it's Christmas Time!!

(Well down there it's just Thanksgiving, but here it's Christmas already, since their Thanksgiving was a month ago.)
